Steel cut oats with cranberries and almonds

At work, I struggle with breakfast. Lately, my routine is to eat a banana before I leave the house and then either steel cut oats with toppings or a tofu scramble that I’ve prepared ahead and frozen in single servings.

Today’s breakfast: steel cut oats with dried cranberries and almonds.

    • These are Trader Joe’s half-salted, roasted almonds, which are fantastic! I also love all kinds of raw nuts: cashews, almonds, pecans, walnuts.

    • I’m obsessed with this breakfast. When I run out of cranberries, I’m going make my own dried cranberries so I can control the sweetness!
